Why You Crave Biscuits at 3pm (It's Not Willpower)
That afternoon slump is a predictable neurochemical event - driven by blood sugar crashes, dopamine depletion, and a night of subpar sleep. Here is how to break the cycle without fighting yourself.
It's mid-afternoon. You've eaten a reasonable lunch. You're not hungry - not physically, anyway. But something is pulling you toward the biscuit tin, the vending machine, or the leftover cake in the kitchen. The pull feels like a character flaw. It isn't. It's a predictable, well-documented cascade of neurochemical events, and understanding the mechanism is the first step toward not being controlled by it.
The Blood Sugar Crash
If lunch included a significant amount of refined carbohydrates - white bread, pasta, rice, or anything with hidden sugar - your blood glucose spiked about 30-60 minutes after eating. That spike triggered an insulin response to clear the excess glucose from your blood. But insulin often overshoots, driving glucose below your pre-meal baseline. This dip, sometimes called reactive hypoglycaemia, typically hits 2-3 hours after a carb-heavy meal - which, for a lunch eaten at 1pm, lands squarely at 3pm.
The dip triggers a hormonal alarm: cortisol rises to mobilise emergency glucose, and your brain starts sending urgent signals to eat something sweet. The craving isn't random. It's your body responding to a perceived fuel emergency created by the spike-and-crash pattern of the meal you ate hours ago.
The biochemist Jessie Inchauspé, who tracked this pattern obsessively with a continuous glucose monitor, found that the severity of the crash is directly proportional to the height of the spike. Flatten the spike - by eating fibre before carbs, walking after the meal, or choosing whole grains over refined ones - and the crash either shrinks or disappears entirely.
A study in Nature Metabolism tracked over 1,000 participants and found that the size of the post-meal glucose dip - not the peak - was the strongest predictor of subsequent hunger and calorie intake. The Dopamine Deficit
Blood sugar isn't the whole story. By mid-afternoon, your dopamine - the neurotransmitter responsible for motivation, focus, and reward-seeking - has been depleted by the morning's work. Every email answered, every decision made, every task completed drew from that reservoir. Andrew Huberman describes dopamine as a finite daily resource that gets spent through cognitive effort, and the 3pm slump coincides with its natural low point.
Sugar is one of the fastest dopamine triggers available. It doesn't just taste good - it activates the same reward pathways that respond to other highly reinforcing stimuli. The 3pm biscuit craving is partly your depleted dopamine system looking for a cheap, fast hit. The hit works - briefly. Thirty minutes later, you're back where you started, but now with a sugar spike entering the queue.
The Sleep Debt Factor
If you slept poorly the night before - even by just one hour - the 3pm craving gets significantly worse. Sleep deprivation increases ghrelin (the hunger hormone), decreases leptin (the fullness hormone), and shifts brain activity toward impulsive decision-making. A study published in the European Journal of Clinical Nutrition found that sleep-restricted adults consumed an average of 385 extra calories the following day, with the increase coming almost entirely from high-sugar, high-fat snacks.
The combination of a blood sugar dip, depleted dopamine, and a sleep-driven hormonal shift creates a near-irresistible pull toward something sweet. Blaming yourself for giving in is like blaming yourself for shivering when it's cold. The system is doing what it was designed to do.
Breaking the Cycle
The fix isn't willpower. It's upstream intervention - disrupting the chain before the craving arrives.
- Fix lunch. Include protein (chicken, fish, eggs, legumes) and fibre (vegetables, whole grains) and reduce refined carbs. This flattens the glucose curve and prevents the reactive dip. If you eat pasta, eat the salad first.
- Walk after lunch. Even 10 minutes of movement helps muscles absorb glucose from your blood, reducing the spike and the subsequent crash.
- Prep a better 3pm option. If you know the craving is coming, have something ready that satisfies without spiking: a handful of nuts, an apple with peanut butter, some cheese, or dark chocolate (70%+). These provide fats and protein that stabilise blood sugar rather than crashing it.
- Protect your sleep. The single most effective intervention for afternoon cravings isn't dietary - it's sleeping properly the night before. Seven to eight hours, consistently. The hormonal cascade that follows poor sleep makes every other fix less effective.
The 3pm craving is real, predictable, and physiological. It's not a moral failure. But once you understand what drives it, you can redesign the conditions that produce it - and that's a much more effective strategy than trying to resist it every single day.
