The Vinegar Hack

One of Inchauspé's most cited recommendations is drinking a tablespoon of vinegar diluted in water before a meal. The acetic acid in vinegar temporarily slows the enzyme that breaks down starch into glucose in your digestive system. Several controlled studies have confirmed a measurable reduction in post-meal glucose spikes when vinegar is consumed before a carbohydrate-heavy meal.

It's not a miracle. It doesn't cancel out a bag of sweets. But as a low-cost, low-effort habit before a pasta dinner or a rice-based meal, there's reasonable evidence that it helps flatten the glucose curve - and a flatter curve means more stable energy and fewer cravings later.

Why Glucose Crashes Make You Angry

The "No Added Sugar" Trap

One of the sharpest observations from Inchauspé's work: a glass of orange juice contains roughly 25 grams of sugar. That's an adult's entire recommended daily sugar allowance from the WHO, in one glass. Nutritionally, orange juice delivers almost the same glucose and fructose load as a glass of Coca-Cola. The difference is that one has a health halo and the other doesn't.

"No added sugar" on a juice label means no refined sucrose was added. It says nothing about the naturally occurring sugars, which hit your bloodstream the same way. The fibre that would have slowed absorption in a whole orange has been stripped out during juicing.

None of this means you can never drink orange juice. It means understanding what it actually is - a sugar delivery mechanism, not a health food - lets you make an honest choice about when and how much.
