Most Olive Oil Is Not What It Claims to Be

UC Davis tested 186 imported extra-virgin olive oils and found that more than two-thirds failed the International Olive Council's sensory standards. What you're actually buying - and what to look for instead.

Olive oil is one of the most studied foods on earth, with a body of evidence pointing to genuine cardiovascular, anti-inflammatory, and neuroprotective benefits. It's also one of the most frequently adulterated foods in global commerce - a problem so pervasive that the European Parliament held hearings on it in 2023. The trouble is that the label on a bottle of olive oil tells you very little about what's inside.

The Extra Virgin Problem

"Extra virgin" is a technical designation set by the International Olive Council (IOC). It requires that the oil be produced solely by mechanical means (no chemical solvents), have a free acidity of no more than 0.8%, a peroxide value below 20 meq/kg, and - crucially - pass a sensory panel test showing no flavour defects and measurable fruitiness, bitterness, and pungency. These sensory requirements are the hardest to fake.

In a landmark 2010 study by the UC Davis Olive Center, 69% of imported extra-virgin olive oils sold in California supermarkets failed IOC sensory standards - meaning they had defects (musty, fusty, rancid, or winey notes) that disqualified them from the "extra virgin" classification. In most cases, this wasn't because they were cut with seed oils; it was because they were made from inferior olives, stored improperly, or were too old. The extra virgin label had been applied regardless.

High-polyphenol extra-virgin olive oil (>250mg/kg of phenolic compounds) significantly reduces oxidised LDL cholesterol and systemic inflammatory markers compared to low-polyphenol olive oil - suggesting that the polyphenol content, not just the fat profile, drives much of olive oil's documented health benefit. What Polyphenols Actually Do

The health benefits of high-quality extra-virgin olive oil are driven substantially by its polyphenol content - compounds like oleocanthal, oleuropein, and hydroxytyrosol that are present in fresh, high-quality oil but degrade rapidly with heat, light, oxygen, and time. Oleocanthal has anti-inflammatory properties similar to ibuprofen at the concentrations found in high-polyphenol olive oil - it inhibits the same COX enzymes. This is not a trace effect. Regular consumption of high-polyphenol olive oil provides a measurable daily anti-inflammatory stimulus.

The EU approved a health claim in 2012 that olive oil polyphenols "contribute to the protection of blood lipids from oxidative stress" - but only for oils containing at least 250mg/kg of polyphenols. Most commercial olive oils, including many branded as extra-virgin, fall well below this threshold due to processing conditions and shelf life degradation.

How to Identify Quality Olive Oil

Price is a rough indicator - genuinely high-polyphenol early-harvest olive oils cost €15–€30 per litre to produce. Any bottle priced under €6–8 is unlikely to contain premium oil regardless of labelling. The most reliable indicators are: a harvest date (not just a "best before" date - you want oil from the most recent harvest, ideally consumed within 18 months); country of origin on the label (single origin is more verifiable than "blend of EU olive oils"); and certification from bodies like the California Olive Oil Council, which conducts independent sensory testing.

When you open quality extra-virgin olive oil, it should smell grassy, fruity, or peppery. It should cause a mild burning sensation at the back of your throat - that's the oleocanthal. If it smells like vegetable oil or nothing in particular, it's not high-quality extra virgin regardless of what the bottle says.
