Most are partly right and partly wrong.
The key insight missing from most oil debates is that the healthiest oil depends on how you are cooking. An oil's behaviour changes dramatically based on temperature, and Indian cooking involves everything from gentle tadka to high-heat deep frying.
Understanding Smoke Points
When an oil is heated beyond its smoke point, it breaks down, releasing harmful compounds including aldehydes and free radicals. Indian cooking frequently involves high temperatures: deep frying samosas at 180 degrees Celsius, searing vegetables in a wok at 200 degrees, or preparing tadka where oil is heated until it shimmers.
