Hydrogenated fat (commonly known in India as vanaspati or bakery shortening) is liquid vegetable oil chemically processed with hydrogen to make it solid or semi-solid at room temperature. While this improves shelf life and texture for commercial baking, the process generates trans fatty acids and increases saturated fat levels, both of which are highly detrimental to cardiovascular metabolic health.
