The Hidden Cost of Ultra-Processed Food: What You're Actually Paying For
Ultra-processed food looks cheap at the checkout. But when you account for health costs, waste, and the actual nutrition delivered per euro, the economics shift dramatically.
A packet of supermarket biscuits looks like good value. So does a multipack of crisps, a box of cereal, or a branded ready meal. The sticker price is low. But the comparison that matters isn't biscuits versus artisan cookies - it's biscuits versus oats, or ready meals versus the equivalent home-cooked version. When you make that comparison, the economics of ultra-processed food look very different.
What Ultra-Processed Actually Means
The NOVA classification system, developed at the University of São Paulo, categorises foods not by nutrient content but by degree of industrial processing. Group 4 - ultra-processed - covers formulations typically containing five or more ingredients, including additives rarely found in a home kitchen: emulsifiers, stabilisers, artificial flavours, colour enhancers, and preservatives. If you can't make it from scratch with regular kitchen ingredients, it's likely ultra-processed.
Ultra-processed foods now constitute more than half of total energy intake in the UK and Ireland. Research shows that every 10% increase in the proportion of ultra-processed food in the diet is associated with a 12% higher risk of cancer, a 21% higher risk of depression, and a 25% higher risk of cardiovascular disease mortality. The Actual Cost Comparison
Let's do the arithmetic. A box of branded breakfast cereal costs roughly €3.50 for 500g. Porridge oats cost roughly €1.20 for 1 kg. The cereal contains substantially more sugar, less fibre, and is more calorie-dense despite the premium price. The oats require two minutes of preparation. The price differential across a week of breakfasts is roughly €5–7 per person.
Multiply this pattern across the diet - cereal, biscuits, crisps, ready meals, flavoured yoghurts, branded drinks - and you get a meaningful monthly expenditure on processing premiums that deliver inferior nutrition. The processing costs money; the marketing costs money; the convenience costs money. None of these costs add nutritional value.
The Palatability Engineering Problem
Ultra-processed foods are specifically engineered to override satiety signalling. The combination of precisely calibrated salt, sugar, and fat - what food scientists call the "bliss point" - triggers dopamine release in a way that natural whole foods typically don't. The result is overconsumption, which means you spend more on food than your actual caloric needs require.
A Practical Audit
Review your last week of food spending against the NOVA framework. Identify the five most expensive ultra-processed items. For each, identify a minimally processed equivalent. The savings are frequently significant - and the nutritional upgrade is automatic. Replacing branded cereals with oats, canned soups with homemade equivalents, and flavoured yoghurts with plain Greek yoghurt and fruit alone is sufficient to see both financial and nutritional gains.
